Eyeball Brownie Bites

This Halloween, I am all about EYEBALLS.




Why is that? I have no idea, but I have noticed I am loving eyeballs and crows (ravens?) this year.



As usual, I am also all about sweets.



You remember these?


These Pumpkin Spice Brownie Bites were invented by Jocelyn at Inside BruCrew Life.



Are you sick of hearing about them yet?
 OK, this is the last time I will discuss them...at least until the next batch! LOL




I HAD to make these into eyeballs! Here is my version:

OK, for those of you who aren't into edible eyeballs, here's a different version:

Grown-up types seemed to love this one!

As you can see, I used white chocolate instead of milk chocolate.
I love the colors! Thanks, Hershey, for making that easy on me.

I also made these:
Plain Brownie Bites
The fans kids loved this one!



I think these are way better than cake balls or cake pops because there are real brownies inside.
I don't care for that wet cake ball texture as much as this!
You will be seeing more experiments in this department, to be sure!





TIPS:
These look burned but they are not--it's just moist chocolate goodness! 

I took them out of the oven early so they were still warm and doughy and mold-able.
I used a cookie dough scoop to scoop them out, then rolled them up like Play-doh while they were still warm. I was hoping they would be less crumbly this way.

I popped them in the freezer for a bit to firm them up before I dipped them.



For the swirl on the top, I just melted a few kisses in a baggie in the microwave,
cut a hole in the bag, 
and piped the chocolate on. 
Super easy!


If you think the pumpkin is too strong, though, 
you could use frosting or milk chocolate for that part... or sprinkles!

I don't know whether to say Yum or Ewww! The eyeball thing . . . what a hit for Halloween! They all look scrumptious!

My mouth already started to water upon seeing the words Pumpkin Spice Brownie Bites. But, when I saw one cut open with that candy sitting in it, well, that was the ultimate. I don't think I'd be able to stop at just one.
